Two sharpening modes: coarse and fine
COARSE: Place the knife between the tungsten rods to sharpen your damaged blades. Maintain an angle between 15 to 45
degrees, slide the base towards the tip of the knife. Repeat 3-4 times, or more if necessary. This mode allows the
blade to regain their initial sharpness. Always complete the exercise by using step 2, FINE mode. Depending on their
level of use, it's good to sharpen the knife every 3-6 months.
FINE: Place the knife between the ceramic rods and gently pull through a few times by maintaining an angle between
15 to 45 degrees. This mode removes all the steel macro-waste generated by the first sharpening step, refines and
gives a finish to the blade. Depending on the level of use, it's good to sharpen the knife every week. This step
is independent from step 1, COARSE mode.
