Breakfast - Spinach & Tomato Frittata

Ingredients

  • 3 eggs
  • 30 ml milk
  • 2 Slices Feta cheese
  • 1 finely chopped onion
  • 1 cup baby spinach
  • ½ cup sun dried tomatoes, diced

Preparation

  1. In a bowl, whisk together milk and eggs. Add Feta cheese and mix.
  2. In a 6" The Rock fry pan, cook onions to taste.
  3. Add sun dried tomatoes and spinach. Mix together until spinach has reduced in size.
  4. Add egg mixture and cook in oven at 350F for 20 minutes.
