- 1/3 cup olive oil
- 1 onion, diced
- 4 Cloves Minced Garlic
- 1 lb. Italian Sausage
- 3 bell peppers, diced (Green and red)
- ½ c. red wine
- 28 oz. canned tomatoes
- 15 oz. tomato sauce
- 1 c. water
- ¼ cup fresh Basil chopped
- 1 tablespoon Italian Seasoning
- 250 g Penne pasta (4 cups)
Slice the sausage in 1 inch slices. Put the pressure cooker on Sauté mode. Cook the onion and garlic in the olive oil. Add the sausage and bell peppers cook until sausage is browned. Add wine and let it reduce by half. Add all sauce ingredients (everything except the pasta). Stir to combine.
Press the Beef stew button then press the Minutes button until you reach 10 minutes. Once cooking is complete, manually release the pressure.
Carefully open the lid and add pasta to the pot. Stir to combine.
Press on Pasta then press the Minutes button until you reach 10 minutes. Let the timer count down. When the digital timer reaches 06:00, press Cancel. Manually release the pressure and carefully open the lid.
Stir and serve with grated parmesan cheese.
