Shrimp Pasta Salad

A quick fresh shrimp salad perfect for lunch at the office!
Ingredients
For the salad:
- 750 ml (3 cups) of pasta (farfalles)
- 18 cherry tomatoes (assorted colors)
- 500 ml (2 cups) baby spinach
- 250 g (416 ml) small shrimp
- 2 French shallots, finely chopped
- Salt & pepper to taste
For the dressing:
- 80 ml (1/3 cup) greek yogourt 0% fat
- 80 ml (1/3 cup) orange juice
- 45 ml (3 tablespoons) chopped parsley
- 30 ml (2 tablespoons) chopped dill
- 15 ml (1 tablespoon) orange peel (zest)
- Salt & pepper to taste
Preparation
- In boiling salted water, cook pasta until al dente. Strain and rinse under very cold water. Strain again.
- In a large bowl, mix all dressing ingredients together and whisk.
- Cut cherry tomatoes in half or in quarters.
- In the large bowl, add pasta, baby spinach, shrimp, cherry tomatoes and chopped shallots. Add salt & pepper and mix together.
