Shrimp Pasta Salad

A quick fresh shrimp salad perfect for lunch at the office!

Ingredients

For the salad:

  • 750 ml (3 cups) of pasta (farfalles)
  • 18 cherry tomatoes (assorted colors)
  • 500 ml (2 cups) baby spinach
  • 250 g (416 ml) small shrimp
  • 2 French shallots, finely chopped
  • Salt & pepper to taste

For the dressing:

  • 80 ml (1/3 cup) greek yogourt 0% fat
  • 80 ml (1/3 cup) orange juice
  • 45 ml (3 tablespoons) chopped parsley
  • 30 ml (2 tablespoons) chopped dill
  • 15 ml (1 tablespoon) orange peel (zest)
  • Salt & pepper to taste

Preparation

  1. In boiling salted water, cook pasta until al dente. Strain and rinse under very cold water. Strain again.
  2. In a large bowl, mix all dressing ingredients together and whisk.
  3. Cut cherry tomatoes in half or in quarters.
  4. In the large bowl, add pasta, baby spinach, shrimp, cherry tomatoes and chopped shallots. Add salt & pepper and mix together.
