Shrimp and Mango Tortilla Sandwich

Ingredients

  • 4 tortillas (8 inches each)
  • Boston lettuce (4-8 leaves)
  • 85 ml (1/3 cup) mayonnaise
  • 15 ml (1 tablespoon) orange juice
  • 2.5 ml (1/2 teaspoon) cari powder
  • 30 ml (2 tablespoons) dried coriander
  • Pepper to taste
  • 375 ml (1 1/2 cups) shrimp
  • 1 mango, diced
  • 1 onion, chopped
  • 1 can of heart of palm (398 ml), strained

Preparation

  1. In a bowl, whisk mayonnaise with the orange juice and curi powder.
  2. Add other ingredients and mix. 
  3. Place lettuce leaves on tortillas. 
  4. Add shrimp mixture and roll tortillas.
