Ingredients

  • 2 cups diced tomatoes
  • 1 small red onion, chopped
  • ½ teaspoon fresh thyme
  • ½ teaspoon fresh chive, chopped
  • ¾ cups diced cooked ham
  • 2 slices of cooked bacon
  • 4 eggs
  • 2 cups of grated Mozzarella
  • Salt and pepper

Preparation

  1. Preheat oven to 350F
  2. Mix potatoes with onion, thyme and oil.
  3. Cook in oven for 25 minutes.
  4. Take out of the oven, add ham, bacon and make small cavities to place eggs. 
  5. Sprinkle Mozzarella cheese on top and continue cooking for 15 minutes.
  6. When serving, add chopped chives, salt and pepper.
