Breakfast - Spinach & Tomato Frittata

- 3 eggs
- 30 ml milk
- 2 Slices Feta cheese
- 1 finely chopped onion
- 1 cup baby spinach
- ½ cup sun dried tomatoes, diced
- In a bowl, whisk together milk and eggs. Add Feta cheese and mix.
- In a 6" The Rock fry pan, cook onions to taste.
- Add sun dried tomatoes and spinach. Mix together until spinach has reduced in size.
- Add egg mixture and cook in oven at 350F for 20 minutes.
