Pangasius Filets with Orange Sauce

You can use a variety of white fish to prepare this recipe, cooked in The Rock Diamond scratch resistant cookware.
Ingredients
Fish filets
- 2 White fish filets (fish of your choice)
- ½ Flour
- Salt and pepper
- Butter
Orange sauce
- 1 cup Orange juice
- 1 Orange for its zest
- ¼ cup Lemon juice
- 230 g butter, cut in cubes (very cold)
- Salt and pepper
Preparation
Fish filets
- Place flour in a large bowl, salt, pepper and cover the fish filets with flour mixture.
- Melt butter in a fry pan on medium heat, place fish side by side in the pan and cook until brown.
- Turn filets and cook other side until brown.
- Remove from heat and serve with orange sauce.
Orange sauce
- Pour orange juice and lemon juice in small saucepan and bring to boil. Cook for 1 minute then add orange zest.
- Remove from heat, add butter 3 cubes at a time whisking well between each addition.
- When half of the butter is incorporated, place saucepan on very low heat and continue adding butter one cube at a time.
