  • 2 Corn Tortillas
  • 2 Eggs
  • 1 Avocado, cut into strips

Salsa

  • 1 Mango, diced
  • 1 Tomato, diced
  • 1 Small Jalepeno pepper
  • 2 teaspoons Olive oil
  • 3 teaspoons Lemon juice
  • Fresh Coriander, to taste

Preparation

  1. Cut and mix SALSA ingredients
  2. Cook eggs and serve with Tortillas
