- 1 lb (454 g) sweet Italian sausage – meat only (no casing)
- ½ lb (225 g) lean ground beef
- 1 yellow onion, diced
- Salt, pepper
- 2 carrots, sliced
- 1 celery stalk, diced
- ¼ cup (60 ml) flour
- ½ cup (125 ml) tomato sauce
- 2 cups (500 ml) chicken broth
- 1 sprig thyme
- 1 cup (250 ml) frozen peas
- 3 cups (750 ml) mashed potatoes
In your The Rock One PotTM 7.2 Qt Stock Pot, at a medium heat setting, gently sauté sausage meat and ground beef until partially cooked. Add onions and cook until beef is golden brown and onions are tender. Season with salt and pepper. Add carrots and celery and cook for 2 to 3 minutes. Add flour. Stir well and cook for 1 to 2 minutes. Add tomato sauce, chicken broth and thyme; stir well. Cover and bring to a boil. Reduce heat to medium-low, stir and simmer, uncovered, for 10 to 15 minutes. Add peas to simmering mixture and stir; remove from heat. Preheat the oven’s broiler. Spoon mashed potatoes on top of sausage and beef mixture and finish cooking under the oven broiler for about 5 minutes or until lightly browned.
